I like the idea of the player's room being external to the game world and having notes etc accessible within the player's room. I can see that working well with a game that involves collecting a lot of information. The other ideas here probably could work well, but blurbs don't do them justice. For instance text adventure games are often frustrating or too linear, it depends how well it's implemented. You'd really need to flesh out the whole story or even write a script before I could judge it. "Puzzles about XYZ topics" is also too vague, the details are all-important and there are a lot of mediocre "puzzle" games which reuse mechanics from other games.
Maybe instead of text adventure ">open door" mechanics, something more similar to non-linear open world Ace Attorney would work better? I think those games handle "gathering and presenting clues" really well. They achieve a good middle ground between seamlessly applying learned information and ">use key on locked door". If it's non-linear you could also design multiple solutions to each obstruction. Another possibility is you could also have some "conversations" which are for instance just you talking to yourself in front of a literal locked door, and you have to present the key to yourself while wondering aloud how to unlock the door.
Pitch 2:
I assume demon types are fixed but the keys required to summon them are unknown at the beginning of each run? Sounds cool. I enjoy the process of gradually identifying item types within a run. Having the option to change between different demons could introduce a lot of fun strategic depth, which roguelikes often lack as they tend to focus on tactics. I also think you should make it so that encountering all demons of each grade from the pool is not guaranteed, so you have to make the most of what you find and adapt your strategy.
I'm a little confused about whether demons are long-term party members who can attack or if they can only be useful when you burn consumable items. I hope they can attack as regular summons with only the hunger drain. Either way I think it's smart to give them some limited use abilities, since managing a large collection of consumable resources to get you out of difficult situations is one of the best parts of a roguelike.
I'm not sold on the idea of quests in a roguelike, I think you should always be pushing forward. Having to side/backtrack to do random stuff would probably either put too much strain on your supplies or require the game to oversupply the player in advance. Maybe you could make it work though.

could go over some of the ideas in more detail, but I feel like it doesn't accomplish much. Also, I had a lot of plans to make the text adventure interactions less annoying, and interacting NPCs was supposed to be a fairly big part of the game.
Basically the idea is just I really like games where part of the puzzle is figuring out what the puzzle even is, and ones where you have to piece together how parts of the world work (See: Ultima 4, Riven). It's hard to say at the moment what the "big picture" of the game really is, and you're not supposed to see the big picture when just starting the game, so I wrote the pitch from that angle. The character of the Dark Lord is also a lot more fleshed out than what I probably let on, and he's one of the more interesting parts of the game, but I didn't get into it for similar reasons.
Demons are more akin to weapons/armor than party members. I suppose the game is more like If…/Persona/Avatar Tuner in that sense. The quests are mostly about leading you down the path of the game, to more dungeons and the real story. It should fold out not too dissimilar to Shiren, just with an overworld you have to explore and some more critical thinking about where to go and what to do, like what a normal Ultima/DQ/SMT would have.
The big question is essentially "does the first game sound potentially interesting enough to gut through having to figure out how to make really good puzzles." I am thinking the answer is no at the moment, but it is hard for me to drop it when I already started working on it.
